Description

Picked from the same shrub as the black pepper, white pepper undergoes a special treatment post-harvest. The ripe red berries are soaked for a few days in running water, to remove the outer skin from the core. The striking bright color of these grains is developed during the drying process. The severity level of their spiciness corresponds approximately to that of black pepper. White pepper, however, is distinguished by its special aromatic mildness. White pepper is often used for seasoning light sauces and white meat, since black pepper is often an eye sore. White pepper is also very useful for adding one last taste before serving.
