Description

To make the Candidum Capra, the Eggemoa cheese factory took a walk on the wild side and used goat's milk instead of cow's milk! In contrast to their other cheese specialties, the milk for this white mould cheese does not come from Eggemoa's 15 Brown Swiss cows. Instead, a neighboring farmer supplies the milk for this creamy soft cheese from the circa 200 goats he keeps. During the five-week ageing period, the classic goat cheese flavours and creamy, melt-in-your-mouth consistency develop. The goat's milk candidum goes wonderfully with fruits and berries as well as fig mustard. These properties make it a perfect cheese for dessert platters.
