Easter Lamb Cake with QimiQ Recipe

A classic Austrian cake

This cake is traditionally served with Easter brunch in Austria and can be made quickly and easily with QimiQ products.

To make this recipe, you need a lamb shaped cake tin.


  • 250 g QimiQ cream base
  • 100 g butter, melted
  • 4 egg yolks
  • 1 packet of vanilla sugar (8 grams)
  • 1 lemon: the juice and finely grated zest
  • 4 egg whites
  • 180 g of sugar
  • 1 pinch of salt
  • 120 g cake flour
  • 0.5 pkg of baking powder
  • 1 packet of custard powder (37g)
  • 150 g ground almonds
  • Butter, for the lamb tin
  • Flour, for the lamb tin


  1. Preheat the oven to 160 ° C (convection).
  2. Mix the QimiQ sauce base, melted butter, egg yolk, vanilla sugar, lemon juice and zest together.
  3. Beat the egg whites, sugar and salt until stiff.
  4. Mix the flour with baking powder, pudding powder and almonds and stir quickly into the QimiQ mixture. Fold in the beaten egg whites.
  5. Pour the dough into a greased lamb dish dusted with flour and bake in a preheated oven for about 35 minutes until golden brown.
  6. Tip: dust with icing sugar before serving.
