Description
Annatto seeds refer to the orange-red seeds of the small, evergreen annatto tree that is native to tropical South America.
As early as pre-Columbian times, annatto was used for coloring food, for drugs and for body painting. Even in the Western world annatto was used to color butter, cheese, smoked fish and cosmetics.
The seeds smell faintly flowery or pepperminty and have a delicate, earthy, slightly peppery flavor with a hint of bitterness. They give food a pleasantly earthy flavor when they are used in much higher amounts than required for dyeing.
