Spiceworld Ground Tahiti Vanilla

This Tahitian vanilla bean is from the orchid family. The Vanilla tahitiensis orchid comes from the Tahitian island of Bora Bora. The vanilla extract is obtained from the capsule of the ripe fruit. The vanilla flavor is concentrated in the seeds and in the oil surrounding the seeds. It all starts with the artificial pollination of the plant. Then the ripe pods are hand sorted and collected according to quality levels. Processing is very complex, because the fresh pods still have almost no taste. The vanillin is produced by an enzymatic reaction. For this, the freshly harvested fruit is exposed to hot water or steam treatments. This complex procedure makes the Tahiti vanilla one of the most expensive spices in the world.

Chefs of haute cuisine also use this vanilla to refine poultry and game, fish and seafood. It is often used in combination with cardamom, cloves, ginger, chili and pepper.
