Tip: allow the wood to soak in water for 1-2 hours, then wrap with aluminum foil. Pierce the foil several times with a fork and place directly on the charcoal or grill surface. This creates a beautiful smoke screen and a subtle smoky flavor. Make sure that the griller is then closed so that the smoke can be absorbed by the food.
