Description
The “Sairet” is a traditional speciality of the rural cuisine in Southern Tyrol. These dressings are made from fermented whey. The production of the Sairet takes time, the best raw materials and a good feel for processing. After two weeks of fermentation, the fermented whey is removed from the yeast and is allowed to rest for a while. Then, the vinegar cultures transform the fermented whey into the mildly sour dressing. Due to the gentle processing, the special flavours are retained.
