The parsley root is native to the southeastern Mediterranean (Sardinia) and grows wild today in territories from Spain to Greece, as well as in North Africa.

The parsley root belongs to the Umbelliferae family and comes from the south-eastern Mediterranean. The strong aromatic vegetable with its yellowish white to light brown meat is added to soups and vegetable dishes as a spice.
They can only be eaten raw when pureed as they are quite hard.

Together with other root vegetables, parsley root makes excellent vegetable broth spice.
