Pure spelt has a delicate, slightly nutty, sweet flavor. This germinating variety of Oberkulmer Rotkorn is a valuable vitamin B supplier. It de-acidifies, is a base food and is very rich in protein.
Soak for 3-10 hours in cold water, then let swell 25 minutes. Cook for 40 minutes. Often used in casseroles, soups, and stews. It can also be added to cereals, or müsli, or sprinkled over a salad.
