The Sweetness of South America
Stevia rebaudiana, called Stevia, is a plant that is native to South America. It is also called stevia, sweetleaf or honey herb and grows as an annual plant on the border between Paraguay and Brazil. Natives have known for centuries that the plant contains substances that are very sweet. Since the plant was discovered it has been grown as a cultivated plant.
Stevia grows from 70 to 100 cm high and has 2 to 3 cm long leaves. More than 100 herbal substances are contained in the Stevia plant, in particular, terpenes and flavonoids. The components responsible for the sweetness of the stevia, are eight different glycosides.
