Once optimal maturity is reached, the peppers are picked by hand and dried slowly and gently. Depending on your needs, the dried pods are ground through several grindings on stone mills. In this method, no heat is produced so that the colors remain bright and the essential oils are preserved. The result is a paprika powder of exceptional color and flavor.

The Sweet paprika fits well with duck, cream cheese, most legumes and vegetables, chicken, beef, veal, rice, and pork. Paprika does not like extreme heat, otherwise it becomes bitter.
