Star Anise
Illicium verum
Use:
Star Anise is used whole or ground. In Chinese cuisine it is often used for more substantial dishes such as lamb, duck and goose. In Europe, it is known more for Christmas cuisine and desserts. In addition, star anise is an important part of the Chinese Five Spice Blend. The shell of the star anise is more aromatic than the core.
Origins:
Star anise is probably from southern China and has been known in Europe only since the 18th century. The main producing areas are now Vietnam, Cambodia, Laos, Japan and the Philippines.
