Description
This is a red wine vinegar specialty from Emilia Romagna - home of first-class Parma ham, mortadella, parmesan and pasta. Traditionally matured in large oak barrels, a slow process called "Lento a Truciolo", the alcohol in the wine is slowly transformed into vinegar with the help of bacteria. The vinegar is then matured in barrique barrels for another year resulting in a strong, distinctive taste with an exciting variety of aromas.
