Vergeoise sugar is obtained from sugar beets, while Demerara sugar is extracted from sugar cane. The harmonious interplay of both ingredients is the basis for numerous culinary desserts, especially when you prefer a delightful caramel note.

Vergeoise sugar is very fine, slightly moist and has creamy caramel nuances. Demerara sugar is brown in color, the original color of cane sugar. The name comes from the Dutch colony where sugar was first produced. Today, the bulk of the production has shifted to Mauritius. This cane sugar consists of large crystals, has a molasses content of about 2 to 3% and has discreet caramel, cinnamon and rum notes.

Use this rich spiced sugar for numerous desserts: for cakes, sweet pastries, tea, coffee, iced coffee, milk products, Flans, crepes, roasted almonds, crème au caramel and crème brûlée.
