Origin of the Organic Tellicherry Pepper
These organic Tellicherry peppercorns are native to Kerala in Southern India. They are organically grown in the region around the coastal town of Thalassery. The West Coast of India is dedicated to the cultivation of exotic pepper varieties, including the organic Tellicherry pepper. This organic pepper requires special knowledge for cultivation and harvesting and only the largest peppercorns are chosen for harvest. They're much larger than conventional peppercorns.

The Harvest
The peppercorns are handharvested as soon as they mature. Only a small percentage of the ripe fruit can be used. Since a lot of experience is necessary to harvest the pepper, the Tellicherry pepper is an exclusive, premium pepper. The ripe peppercorns can be recognised by their yellow-orange peel. During the drying process, the peppercorns develop their typical dark colour as well as their intense flavour.

Flavour and Use
The flavour is as exotic as you would expect: dark and smoky with a hint of spice. Not to worry though, even if you don't like spicy food, you can still enjoy this pepper by carefully using it.
