Description
Whole grain Einkorn wheat, like Emmer and spelt, is considered an ancient grain. Unfortunately, this type of grain has fallen out of use since it does not yield as large a crop at harvest as classic wheat. Einkorn is now making a real comeback though, as it is ideal for organic farming. The grain is very resistant and grows even on poor soil. It is not sensitive to cold and is downright resistant to pests.
- The valuable nutrients in this type of flour also make it special.
- The whole grain flour does not bind well to water, so it is better house it for firm doughs.
