Tarhonya is the name for Hungarian grated barley, also known as egg barley. It is prepared like rice, and it offers just as many possibilities. It makes a great side dish for goulash or stews and can be used as an ingredient in stir-fry dishes, as an alternative to Risi Bisi or creatively in risotto recipes.
