These are ok as corn cakes. They weren't as crispy as I'd have liked - perhaps the packaging wasn't as air-tight as is ideal to make them perfectly crisp.
I recently discovered that puffed corn cakes (and actually any puffed grain / puffed grain cake) is incredibly high on the glycemic index (GI) scale. Higher than pure sugar! Pure sugar has a GI number of 65 and corn cakes has a GI of 87! Apparently the puffing process makes the sugars a lot more free and available to the body. So from what I understand these are worse for blood sugar levels than eating pure sugar! And I worry that eating a lot of them regularly may strain your pancreas and contribute to risk of developing type 2 diabetes.
