Puglia, Italy is famous for its speciality fish dishes from the Adriatic and Ionian Seas. These freshly caught anchovy fillets are familiar to anyone who has ever sampled Puglian cuisine. The anchovies are marinated with sunflower oil, a little vinegar, garlic and parsley immediately after they are caught!
This convincing combination of fresh seafood and summery seasoning perfectly complements any antipasti plate.
