Description

The leaves of the Indian curry tree are an important spice in vegetarian South Indian and Sri Lankan cuisine. Because of its spicy fresh flavour, it is often used for rice, dal and other vegetarian dishes. Curry leaves are appetizing and, according to Ayurveda, aids digestion (agni tonic).

Uses:
Fry briefly in ghee (clarified butter) and then add the other ingredients. The thin leaves are softer when cooked and can be eaten.

They can be brewed as "Ayurvedic tea".

Note
Not to be confused with "curry powder by Classic Ayurveda". Curry powder is a blend of various spices and is not made from curry leaves.
