DIE KÄSEMACHER call this cheese "the Waldviertel's answer to parmesan". There's no question that this hard cheese ball can easily compete with its Italian counterpart! The tasty tomato and basil coating adds the icing on the cake for Mediterranean dishes. The cheese is adds a creamy note to pasta, risotto and casseroles. Enjoy sliced over steamed vegetables as the spicy, slightly sour aromas of the sheep and goat's milk make a lovely contrast to the veggies.
- The cheese matures for at least 3 months.
