The rind of the Floralpina creamy red culture cheese is refined with juniper berries and thyme. This herbal rind is the perfect way to perfect this cheese and is very important to Eggemoa. The tasty rind is a special delicacy that should never be cut away! It contains the full, intense, resinous flavours of the herbs that grow in the high alpine pastures in the South Tyrolean Dolomite mountains. The six-week ageing period not only ensures the perfect taste, but also the melty consistency of this delicacy.
