Description
Karree is the pig's rib or the back. From this part Kotletts and schnitzel are prepared. The square is very lean and short fibred and is well suited for baking - for Schnitzel, but with the rind also ideal as a whole roast.
The square comes from the Southeast Styrian Woazschwein - raised at the farm of Fam. Neuhold (JAGA's Steirerei).
The Woaz pigs at the farm are fed GM-free and slaughtered stress-free. For these reasons, their meat is especially tender and tasty.
