These chillies are hand sorted and traditionally dried over oak wood in the Spanish region of "La Vera". Depending on the weather, this process takes about 10 - 15 days. The peppers are harvested in October and November and is done by hand, then the pods are cleaned and washed until they are finally dried and packaged.
