The Piment d'Espelette pepper is a medium-sized chilli pepper from the Gorria variety. Piment d'Espelette peppers are PDO, which means they can only take the Espellete name if they were grown and produced in Espelette.

One of the most traditional recipes that uses Piment d'Espelette peppers comes directly from Basque Country. It's called "Chicken Basquaise" - chicken is cooked in white wine with tomatoes and ham and is seasoned with this beautifully well-rounded chilli powder.
