Leek Quiche Recipe: Seasonal Cooking

Leeks are currently in season. Cooking with seasonal vegetable helps us buy our food responsibly as seasonal vegetables do not have to travel so far, thus reducing our carbon footprint. For this reason, we're making Leek Quiche!

Ingredients for 4 People


Pastry Flour

  • 200 g wheat flour (550)
  • 60 ml milk
  • 80 g butter
  • 1 egg
  • ½ tsp salt


Filling


Sauce

  • 200 g whipped cream
  • 150 g grated Emmental cheese
  • 4 eggs
  • Salt & pepper

Preparation

  1. Make a shortbread-like crust from by kneading together the ingredients for the crust. Roll out the dough and line a greased quiche pan with it. Then chill for at least thirty minutes.
  2. Cut the leeks into thin slices and dice the bacon.
  3. Heat butter in a pan and fry the bacon cubes in it, then remove them from the pan. Steam the leeks in the same pan. Season with caraway, salt, pepper and nutmeg and then cover the quiche with bacon and leeks.
  4. Mix the whipped cream, eggs and cheese together, season with salt and pepper and pour over the leek and bacon mixture.
  5. Bake in a preheated oven at 200 ° C for 25-30 minutes.
  6. Alternatively, instead of one large quiche, you can make several mini quiches.
