The historic natural stone Mulino Sobrino mill grinds grain using traditioanl natura stone rollers.

The "Type 2" classification describes the high mineral content of the flour. This means that "type 2" flour contains more parts of the outer layers and germ of the grain than the "Type 00" flours. Type 00 is a particularly light coloured flour with few minerals. The rye flour contains a significant amount of B vitamins as well as vitamin E.

Rye is characterised by its strong flavour. Type 2 rye flour is particularly suitable for sourdough bread, sweet pastries, and gingerbread.
