This flour is made using soft wheat varieties from organic cultivation in the Piedmont region of Italy. Nothing else goes into this flour: no added enzymes, no lactose, acidifiers, fungicides, thickeners or the like.

The wheat grains are washed in drinking water and are then carefully and slowly ground using the Mulino Sobrino's traditional Italian mill.

Tip: Type 0 soft wheat flour is particularly suitable for making pizza dough and classic Italian bread that takes longer to rise, such as
