The Spanish Valderrama family has been dedicated to the cultivation of high-quality olives since 1853. The olive grove that the family calls home has more than 12,000 olive trees, many more than a hundred years old. Since 1920, the family has had its own olive oil factory where the freshly-harvested olives are processed immediately after picking. Just 45 minutes elapse from the time of the olive harvest to the first drops of olive oil manufacturing.

On the contrary to other olives, the "Ocal" variety that is used for the production of olive oil has no bitter, gritty taste. The fully ripe olives conjure up a very mild oil, which captivates and inspires with a fruity flavour.
