Due to the very high concentration of essential oils that cardamom pods naturally contain, the best way to release their flavour is by grinding the pods fresh in a mortar, releasing the oils and their scent and flavour.
Tip: don't throw away the used pods, they can be cooked with rice and filtered out before serving to give your dishes a nice note of spiciness!
Cardamom is often used in sauces, soups and casseroles and is also a popular Christmas spice for making desserts or mulled wine.
The cardamom was grown under the best natural circumstances. It grows wild on small farms and is harvested by the farmers themselves. Cardamom originally comes from ancient forests in India. It contains a high percentage of essential oils that are especially valuable because the cardamom pods can only be harvested every three years. Cardamom belongs to the ginger family.
