Description

These salted anchovy fillets by Testa are preserved in Sicilian organic olive oil. They taste delicious when served as part of an antipasti platter as well as in numerous Mediterranean dishes.

The time required for the anchovies to cure in the salt varies depending on the weather and air quality. After they are cured, they are removed from the salt and wrapped in perforated cloths to remove excess liquids. The anchovies are then deboned before being filled into jars with the olive oil.
