This classic Italian cake is traditionally served at Easter. The Colomba name means "dove" and the cake is also shaped like a dove stretching out its wings. Galup bakes this cake with a light, fluffy dough made of natural sourdough batter. This version of the cake features candied peaches and dark chocolate chips. The glaze is made with crunchy amaretti crumbs. The cake also features peaches and is not made with raisins or candied citrus fruit.
