To make the powdery rice flour, short grain rice (an old, Italian rarity) is ground very carefully and slowly on rollers made of French natural stone.

Rice flour is 100% gluten free. It is only suitable for baking to a limited extent (it's best for flat baked goods such as flatbread, pancakes, or biscuits) and must be mixed with other types of flour for most recipes.

It can be used in many ways when cooking, especially in Asian and Thai cuisine.

Rice flour is also a good alternative to cornstarch and can be used as a binding agent for soups and sauces. It is also ideal for sweet dishes or puddings.
