This gingerbread spice is a blend of spices, which are traditionally used in the preparation of the eponymous pastry. Nowadays they are also used for flavoring yogurt, chocolate, tea or coffee blends, inspiring a seasonal flavor.
This special blend has a strong flavor of coriander, cinnamon and cloves.
Ideally suited for all types of gingerbread, pastries, stollen, fruit bread and strudel.
You can also use this spice for sweet & sour sauces.
Recipe for Liegnitzer Gingerbread:
Mix 300 g of honey, 250 g sugar and 125 grams of melted butter. Mix in 5 tablespoons of water, 125 g of ground almonds, 150 g of currants and refrigerate. Set aside 2 tbsp gingerbread spice, 3 eggs, 50 g of cocoa, 500 g flour. Dissolve 1tsp. hartshorn salts and potash (5g) in water and add the previously mentioned ingredients. Mix until the dough is firm, folding in the refrigerated ingredients. Sprinkle the freshly baked dough with chocolate sprinkles.
