The Cassia cinnamon flower buds resemble small cloves.

You can just see the hard, red-brown seed in the wrinkled, gray brown exterior.

The buds have a spicy, pleasant aroma and taste musky, sweet and spicy, but are less intense than in the bark. Cassia cinnamon is used in China as a basic spice.

The buds are used in the Far East to pickle fruits, for compotes and as a whole instead of using the bark.
