Description
In a remote mountain region in the southern foothills of the High Atlas Mountains in south-east Morocco, lies the small village of Mellha. Mellha is the Arabic word for salt. Centuries ago an ancient fountain was beaten into the barren rock. Saline water is still scooped out of this fountain today.
You can only reach the fountain after a long and arduous walk through the barren, rocky landscape. Men draw the saline water out and pour it over landscaped salt gardens where it evaporates in the hot sun. What remains after the water evaporates is the coarse-grained "Mellaha Lbir" (salt wells) salt. Once the salt dries it is carried by donkeys to the village. Centuries ago, caravans from the desert came to the Mellha to exchange dates for the coveted salt. Due to the extremely inaccessible location of salt fountain, it is not possible to market this high quality salt in large quantities.
Ideal for seasoning carpaccio, tartars, salads and eggs.
