For high-hydration doughs, This creates the ideal conditions for high-hydration doughs to achieve a strong rise and the typical Neapolitan-style, beautifully charred crust in just 45 to 60 seconds. As well as optimising heat distribution, this accessory shortens heat-up time and noticeably improves fuel efficiency. Made from durable 304 stainless steel, the arch can be used with all tray sizes and is compatible exclusively with the second-generation XL oven model.
