Recipe: Vegan Satay Sweet Potato Curry

This delicious curry is easy to prepare, but tastes deliciously exotic. With spinach and sweet potatoes, it not only contains very healthy ingredients, it also has less than 400 kcal per serving.

Ingredients for 4 Servings

  • 500 g sweet potatoes, peeled and cut into pieces
  • 400 ml coconut milk
  • 200 g chickpeas, cooked
  • 200 ml water
  • 3 tbsp red curry paste
  • 2 cloves of garlic, finely chopped
  • 1 tbsp coconut oil
  • 1 onion, finely chopped
  • 1 piece of ginger, 2-3 cm in size, grated
  • 1 tbsp peanut butter
  • Juice from one lime
  • Roasted peanuts as a garnish (optional)
  • Boiled rice as a side dish (optional)

Instructions

  1. Melt the coconut oil in a saucepan over medium heat, then add the onions. Roast them until they turn golden brown.
  2. Now add the ginger and garlic and let it roast for a minute until it smells yummy!
  3. Add the red curry paste, peanut butter, chickpeas and sweet potatoes, stir well, then pour the coconut milk and water on top.
  4. Bring to a boil, then simmer over medium-high heat for around 25-30 minutes - until the sweet potatoes are tender.
  5. Now add the lime juice and season according to your personal taste.
  6. Serve with rice and garnish with roasted peanuts.
