Made from organic rye from the Piedmont region of Italy, this high-quality wholemeal rye flour is ground in Mulino Sobrino's historic natural stone mill in a traditional and careful way.
Whole grain flours contain all the components of the grain, including the valuable germ and bran (the outer layer of the grain). They are particularly rich in fibre, minerals and vitamins. Whole wheat flours require a little more liquid to swell when baking.
In addition to dietary fibre and minerals, whole grain rye flour also contains a particularly high proportion of secondary plant substances. Numerous positive effects for our health are ascribed to secondary plant substances, like lower blood pressure or anti-inflammatory effects.
In addition to the darker colour, the strong taste is also characteristic of rye flour. It's great for giving sourdough, rye or mixed rye breads (mixed with spelt or wheat flour) a hearty flavour.
