Description
Buzzonaglia are parts of tuna fillets that are close to the bone, have a rich blood supply and are therefore dark in colour. Testa marinates the little pieces of red tuna in extra virgin olive oil and transforms the delicacy into a delicious sauce with tomato puree, wild fennel, black olives and capers.
The Testa family has been fishing off the coast of Sicily for more than 200 years. The red tuna (also known as bluefin tuna) reaches the Mediterranean every year after migrating for more than 9,000 km. It is fished according to strict animal welfare guidelines and processed immediately - for freshness and quality that is second to none.
